You’ve gotta make this delicious summer dessert recipe before stonefruit season is officially over!

The star of the show in this sweet crisp recipe are ripe juicy apricots. Apricots are a summertime fruit that often get overlooked in comparison to their other stonefruit relatives like peaches or nectarines. 

But in my opinion, they’re one of the most underrated fruits out there! Especially for baking. 

Apricots are slightly tangier than peaches and nectarines, which makes their flavor profile a bit more complex and robust. And when baked, they get suuuuper juicy and jammy.

This simple apricot crisp recipe showcases these in-season apricots wonderfully. Plus, it’s incredibly easy to make. You basically toss the ingredients in two bowls, throw ‘em together, and bake away! 

Delicious and foolproof! 

And you would never guess it, but this apricot crisp recipe is on the healthier side! 

Simple Apricot Crisp Summer Dessert Recipe 

Apricots are packed with antioxidants like beta carotene, vitamins A,V, and E, and flavonoids, all of which reduce inflammation. They’re also high in potassium, which serves as an electrolyte! 

The crisp is simply sweetened with the apricots and coconut sugar instead of refined sugar. We use almond flour and arrowroot powder so it is completely gluten-free. And we include the healthy fats in coconut oil instead of butter! 

QUICK TIP: I love baking with seasonal fruits this time of year because there is less time between the soil and your plate, increasing its nutrients! I also suggest getting your apricots for this Apricot Crisp recipe from a local farmers’ market if you can!

I can’t wait for you to try this delicious & foolproof summer dessert recipe! This sweet and jammy apricot crisp is absolutely perfect for the season!


Ingredients

Scale
  • 8 Apricots (pitted, sliced)
  • 1/3 cup Coconut Sugar (divided)
  • 1/2 Lemon (juiced)
  • 1 tsp Arrowroot Powder
  • 1/2 cup Almond Flour
  • 2/3 cup Walnuts (chopped)
  • 2 tsps Coconut Oil (chilled)

Instructions

  1. Preheat the oven to 350ºF (175ºC). Grease a baking dish.
  2. In a medium bowl, toss the apricots with half of the sugar, lemon juice, and arrowroot powder until the fruit is coated. Add the apricot mixture to the dish.
  3. In a separate bowl, mix the almond flour, walnuts, and coconut oil until you get a coarse crumble. Add this evenly overtop of the apricots. Bake for 20 to 25 minutes or until the apricots are bubbling and the crisp is lightly browned.
  4. Let it rest for five to ten minutes to set before serving. Enjoy!

Notes

Serving Size: A 9-inch (23 cm) pie dish was used to make four servings. One serving is approximately one cup.

Leftovers: Refrigerate in an airtight container for up to two days.

This really is the perfect summer dessert recipe. The contrast between the sweet jammy apricots and the crispy topping is unreal.

It’s a wonderful treat to share with friends and family at end-of-summer gatherings. And your kitchen will smell incredible as it’s baking too!
