Healing chicken soup is such a staple this time of year. I love making this healing recipe with some added boosters that I’m sharing with you today because it’s not your ordinary chicken soup!
It’s no secret that chicken soup is healing for the body on its own, but there’s no reason why we shouldn’t pump it up with even more nutrients to make it as gut-healthy as possible!
I make healing chicken soup for my family often and I love using this hack to uplevel my recipes. I actually made it this week for dinner!
The recipe I have for you is a delicious Sweet Potato, Kale & Chicken Soup.
It’s one of my all time favorites to make and doesn’t take a lot of time. It’s such a simple recipe that I cook often during busy weeks so I can heat up leftovers.

The kale and dark meat chicken make it extra rich in vitamins K1 and K2, which are both anti-inflammatory and essential to feed good bacteria for a thriving gut microbiome.
The sweet potato adds extra antioxidants and fiber which stimulates the growth of healthy bacteria.
AND PRO TIP: Add bone broth to your base for extra gut healing properties! Bone broth is one of the best natural sources of collagen, gelatin, L-glutamine, glutathione, AND glycine. All of these are fantastic at supporting the gut microbiome!
Soups like this are one of my favorite things to make because I love to boost them with as many nutrients as possible, the cooking process is so simple, it’s easy to digest, and the flavors hit the spot every time.
This recipe is gut-healthy, tasty, and so much better than any soup you buy pre-made at the store! Fresh is always best…

Ingredients
Scale
1 Yellow Onion (small, roughly chopped)
2 Garlic (cloves, roughly chopped)
2 tbsps Extra Virgin Olive Oil
1 1/2 lbs Chicken Thighs (boneless, skinless)
1/2 tsp Sea Salt
2 Carrot (large, chopped)
2 stalks Celery (chopped)
1 Sweet Potato (Japanese, large, cubed)
6 cups Chicken Broth, Low Sodium (Low Sodium)
2 cups Kale Leaves (chopped)
Instructions
In a small blender or a food processor, purée the onion and garlic. Set aside.
In a large pot or dutch oven, heat the oil over medium-low heat. Add the chicken thighs and season with salt. Cook for three to five minutes per side or until they are browned and cooked through. Remove and set aside.
Add the onion and garlic mixture, carrots, celery, and sweet potato to the large pot. Sauté for four to five minutes or until the vegetables have softened. Add a splash of broth or water if needed.
Add the chicken back in along with the broth. Bring to a boil and then reduce the heat and simmer, partially covered for 25 to 30 minutes or until the chicken is tender and the potatoes are cooked through.
Remove the chicken and place it in a bowl or on a plate. Shred it with two forks then put it back into the soup. Add the kale and cook for a few more minutes, until wilted.
Divide evenly between bowls and enjoy!
