I was seriously jumping for joy when I tried this gluten-free chicken nugget recipe and I have a feeling you will too… 

Who hasn’t grown up eating chicken nuggets as a kid (and even as an adult)— from those dino nuggets (if you know, you know) to those fast food drive through runs in college, chicken nuggets were a staple.

But once I started truly taking my health seriously, I swore off foods that don’t serve me or make me feel good. And so I said farewell to some of my favorite guilty pleasures like chicken nuggets. 

Now that I’ve been working in the nutrition and functional medicine space for over 10 years, I know that there are so many alternatives out there to my favorite foods. All I have to do is get a little creative! 

This gluten-free chicken nugget recipe is an elevated version of those guilty pleasure chicken nuggets we all know and love.

They have that familiar crispy texture but paired with a delicious flavor that is so complex you don’t even need a dipping sauce! Trust me, they’re so good you won’t ever want to stop popping them in your mouth. 

And for those of you looking for a healthier option or are working on healing your gut and autoimmunity, this recipe is not only free of any unhealthy ingredients, but also packed with important nutrients to help you heal! 

These healthy chicken nuggets are gluten-free and made with cassava flour, which is an anti-inflammatory root vegetable. They also include other powerhouse ingredients like sweet potato, green onion, ginger, garlic, and coconut aminos.

  • Sweet potatoes are an incredible source of soluble and insoluble fiber which are fantastic for the gut! And not to mention, sweet potatoes are loaded with vitamins and nutrients like beta carotene.
  • Onions are antifungal and antibacterial, which helps keep your gut in good health! Plus, they also help flush fluids from the body as they support the kidneys and help with detoxification. 
  • Ginger increases prostaglandins, which are hormone-like substances that fight against inflammation. These protect and restore the gut lining, helping to heal leaky gut. 
  • Garlic is a prebiotic herb! It also stimulates the liver and colon and is fantastic at helping your body detoxify.
  • Coconut aminos is a sauce that is super high in amino acid content, which are the building blocks of protein. It’s a great soy sauce substitute that is gluten-free, soy-free, and MSG-free. My favorite brand of coconut aminos is called Coconut Secret.

Gluten-Free Chicken Nuggets


Description

This gluten-free chicken nugget recipe is an elevated version of those guilty pleasure chicken nuggets we all know and love. They are guaranteed to be the hit of the party.


Ingredients

  • 8 ozs Extra Lean Ground Chicken
  • 1/2 Sweet Potato (large, peeled and grated)
  • 2 stalks Green Onion (chopped)
  • 1 tbsp Cassava Flour
  • 1/4 tsp Ground Ginger
  • 2 Garlic (cloves, minced)
  • 1 tbsp Coconut Aminos
  • 1/4 tsp Sea Salt

Instructions

  1. Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chicken, sweet potato, onion, flour, ginger, garlic, coconut aminos, and salt. Mix to combine.
  3. Use your hands to form the mixture into balls, slightly larger than a golf ball, and then flatten them slightly into nugget shapes. Transfer to the baking sheet.
  4. Bake for 24 to 25 minutes, flipping halfway through. Broil for one to two minutes at the end if you want to brown them more. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days. Freeze for up to three months.

Serving Size: Three servings yields 12 nuggets. One serving is four nuggets.

No Cassava Flour: Use coconut, almond, or oat flour instead.

More Flavor: Use ground dark meat instead.

This gluten-free chicken nugget recipe is something you can make as a snack or as a staple in a meal. They’re also great to bring to a party or barbecue as a side! They’re easy to make in bulk and a definite crowd pleaser. They are guaranteed to be the hit of the party.
