Imagine this… It’s Sunday morning. You’re watching the rusted leaves fall and curl outside your window as you swirl nourishing pumpkin spice pancakes into real maple syrup.
It’s not too good to be true…With this recipe I’m about to share, this could be your reality.
There’s a crispness to the air lately and I’ve really been enjoying spending more time in the kitchen, focusing on food that reflects the season.
Last weekend I was craving a moment like this but I obviously didn’t want to pick up one of those fall items from the grocery store like pre-made pancake mix that is packed with refined sugar, gluten, and preservatives.
And thus, this delicious gluten free pumpkin spice pancake recipe was born.
These pancakes are amazing, so easy to make, and extremely healing for your gut.
The ingredients include cassava flour, gelatin, apple cider vinegar, real pumpkin, and coconut oil— all of which are anti-inflammatory and gut-friendly. The pancakes are free from refined sugar and sweetened with a little bit of coconut sugar and real maple syrup.
I also love that you BAKE these pancakes rather than cook them on a skillet.
This makes it so easy to multitask while cooking as you can pop them in the oven and don’t have to stand over the stove the entire time. This is a game changer for me with having a toddler running around in the morning who is newly potty trained and needs to be watched constantly.

Did someone say pumpkin spice pancakes? This is the perfect cozy fall breakfast recipe that you don’t want to miss! These pancakes are amazing, so easy to make, and extremely healing for your gut.
Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a large bowl, mix the cassava flour, coconut sugar, baking soda, and pumpkin pie spice until well combined. In a separate bowl, mix the puréed pumpkin, melted coconut oil, and apple cider vinegar.
In a small bowl, whisk together the gelatin and hot water until dissolved. Add the gelatin mixture to the pumpkin mixture and stir well to combine.
Add the pumpkin mixture into the large bowl with the other ingredients and stir until incorporated. This should yield a thicker batter.
Using 1/3 cup to scoop the batter, create round pancakes on the baking sheet, roughly five inches in diameter, smoothing out with a spatula.
Bake in the oven for 30 to 35 minutes, until browned and thoroughly cooked. Note: they will be moist in the middle.
Drizzle with maple syrup and enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to five days. Freeze for up to three months.
Serving Size: One serving is equal to two pancakes and two tablespoons of maple syrup.
No Cassava Flour: Use all-purpose gluten-free flour instead.
