These gluten free waffles are made with delicious, anti-inflammatory, autoimmune friendly ingredients. No gluten, dairy, soy, corn, or even grains!

You know there’s nothing like a warm plate of waffles or pancakes on a Sunday morning! 

The thing is, most individuals with leaky gut and/or autoimmunity react poorly to gluten. This makes enjoying things like pancakes or waffles difficult. 

You might think this means you have to say goodbye to those sweet and glutenous breakfasts… But NOT HERE! 

I’m all about coming up with delicious alternatives to my favorite meals and this week I was craving waffles big time. 

I decided to make these Gluten Free Waffles with Strawberry Drizzle and they are everything your taste buds can imagine! 

They’re perfect to make on a slow weekend morning. Enjoy them by yourself and take a moment alone to be present and start your day with something delicious. 

Or, they’re wonderful as a family treat! Get the family (or roomies!) together, sit down at the table, and enjoy a delicious sweet breakfast while spending quality time with those you love. 

These gluten free waffles are made with delicious, anti-inflammatory, autoimmune friendly ingredients. No gluten, dairy, soy, corn, or even grains! 

Most waffle batter mixes are filled with ingredients that cause inflammation and can make you feel bloated quickly. They’re packed with artificial flavors, and don’t even get me started on the preservatives and gums.

But not this recipe! 

Here’s a little breakdown of how we use gut-healthy alternative ingredients…
  • Bleached white flour —> Cassava flour  (Anti-inflammatory) 
  • Refined sugar —> Maple syrup (A real, natural sweetener) 
  • Canola or soybean oil —> Coconut oil (Contains healthy MCT fats) 
  • High fructose corn syrup —> Fresh strawberry puree (Packed with nutrients)

Gluten Free Waffles with Strawberry Drizzle

These gluten free waffles are made with delicious, anti-inflammatory, autoimmune friendly ingredients!


Ingredients

Scale

2 tbsps Coconut Oil (melted)

2 Egg

1/2 tsp Vanilla Extract

2 tbsps Maple Syrup

1 1/2 cups Unsweetened Almond Milk

1 1/2 cups Cassava Flour

1/2 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Sea Salt

1 cup Strawberries


Instructions

  1. Pre-heat your waffle iron to medium-high heat.
  2. In a medium mixing bowl, whisk together the melted coconut oil, egg, vanilla extract, maple syrup, and almond milk. Set aside.
  3. In a large mixing bowl stir together the cassava flour, baking powder, baking soda, and sea salt.
  4. Mix in the wet ingredients to the dry ingredients and whisk until a smooth consistency is achieved.
  5. Grease the waffle maker. Add the batter to cover the bottom of your maker, about 1/2 cup. Cook for three to five minutes or until golden brown. Continue with the remaining batter until it is used up.
  6. While the waffles are cooking, add the strawberries to a blender or use an immersion blender, and blend for 20 to 30 seconds, until pureed.
  7. Add strawberry puree to the waffles and enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days.

Serving Size: One serving is approximately one waffle and 1/4 cup of strawberry purée.

More Flavor: Add fresh fruit, chocolate chips, or cinnamon to the batter.

Additional Toppings: Top with maple syrup, peanut or almond butter, coconut oil or butter, or additional fruit.

Make it Vegan: Use flax eggs in place of eggs.

I encourage you to try out this recipe, especially if you’ve been missing yummy breakfast options that you typically have to avoid. It’s GOOD to treat yourself once in a while! 

There’s no reason why you can’t enjoy the foods you love while healing the gut and reversing autoimmunity! I’m never about restriction, but always about finding better alternatives.
