Have you ever tried adding avocado to…. BROWNIES?!
It may sound crazy, but trust me it is a gamechanger.
Chocolate is my absolute kryptonite. And brownies are the ultimate… they’re one of my favorite desserts! Who doesn’t love a warm, soft, fudgy brownie? I’m craving one right now just thinking about it.
Growing up they were always a staple dessert at family gatherings. After everyone finished dinner during barbecues or holiday dinners, there was always a tray of brownies ready to be devoured.
When I was diagnosed with my autoimmune conditions and working to heal my gut, I thought fun sweet treats like fudgy brownies would be off limits for me. But boy was I wrong…
I do have to admit, I have tried A LOT of gut-healthy and autoimmune friendly brownie recipes since changing my diet over a decade ago. But I felt like they were always missing that fudge factor that I remembered so well.
Then someone told me to add avocado to my batter and let me tell you, it is LIFE CHANGING…
The avocado adds just the right amount of fudge that makes a brownie so satisfying. And in this recipe I’ve perfected, we of course add healing ingredients like superfood cacao powder and ghee, a healthy fat 😉.

Ingredients
Scale
1 Avocado (medium, ripe)
2 Egg
1/2 tsp Vanilla Extract
1/2 cup Coconut Sugar
3 tbsps Ghee
1/2 cup Almond Flour
1/2 cup Cacao Powder (or cocoa
powder)
1 tsp Baking Soda
1/2 tsp Sea Salt
1/3 cup Dark Chocolate Chips
Instructions
Preheat the oven to 350ºF (177ºC). Add the avocado, eggs, vanilla, coconut sugar and ghee to a food processor or blender and mix well until combined.
Add the almond flour, cacao powder, baking soda and sea salt. Process again until combined. Stir in the chocolate chips, reserving some to place on top .
Line a pan with parchment paper and pour brownie batter in. Smooth the top down and sprinkle the remaining chocolate chips on top. Bake for 18 to 20 minutes.
Remove from the oven and let cool before slicing. Enjoy!
Notes
Avocado: One medium avocado is equal to approximately one cup of mashed avocado.
No ghee: Use coconut oil or coconut butter instead.
Pan size: For 12 servings, we used a 9 x 9-inch pan.
Side note: These healthy fudgy brownies are even BETTER on day 2! Make a batch, cut into portions once they cool, freeze individually, and take one out at a time to defrost. Heat it in a toaster for a few minutes if you prefer ‘em soft! ⠀⠀⠀⠀⠀⠀⠀
These brownies are truly a PERFECT chocolatey dessert. I also suggest adding a little coconut whip on top. If you have a sweet tooth like me, you will NOT be disappointed, trust me!
