I’ve been excited to share this new delicious and sweet recipe with you. I even added a secret gut healing ingredient you won’t even taste…
This ingredient is flavorless & odorless. It’s extremely rich in collagen and amino acids (which are super nutrients, by the way). And has been proven to help heal leaky gut!
Yup you read that right! Just like the main ingredient in Jell-O but without all that artificial nonsense.
Gelatin is a powerful ingredient for gut health and autoimmunity. I highly recommend adding it to recipes and sneaking it in wherever you can! It’s often used as a thickening agent so it’s great in soups, smoothies, and my personal favorite— dessert recipes!
But first, let’s talk about those gut healthy benefits…
Gelatin works hard to heal and seal your gut lining.
This is incredibly important if you have a leaky gut, which happens when your gut lining is loose and weak, allowing food particles and toxins to leak into the bloodstream. When unaddressed, this causes serious inflammation throughout the body and can often result in autoimmunity 😫.
Gelatin is helpful because it’s packed with collagen and amino acids. Collagen actually makes up 30% of the protein in our body and is essential for healthy tissue along your gut lining. It’s also especially rich in glycine and proline— two amino acids proven to improve the integrity of the gut.
Gelatin also restores gut mucosa and encourages healthy enzyme and gastric acid production. This helps the breakdown of food and absorption of nutrients, essential to digestion and keeping your body clear of inflammation.

I’m so excited to share this recipe with you.
These Gut-Healing Lemon Coconut Tarts are naturally sweetened, slightly tart, and have just the right amount of coconut. They have a perfect fresh flavor that I just love 😊.
Check out the recipe below and try them for yourself!
Preheat the oven to 350ºF (177ºC). Grease a muffin tin with coconut oil or fill
with liners.
Blend the coconut and dates in a food processor to form a crumbly mixture.
Transfer to the muffin tin and use your fingers to form an even crust. Bake for 8
minutes or until slightly toasted. Set aside to cool.
Meanwhile, add the water to a pan and sprinkle the gelatin overtop. Let it
thicken for about 5 minutes.
Heat the gelatin over low heat just until it melts. Remove from heat and stir in
the maple syrup, lemon zest, lemon juice and coconut milk.
Fill the crusts with the coconut gelatin mixture and refrigerate for at least 4
hours.
Use a knife to loosen the sides and remove the tarts from the tin. Enjoy!

Leftovers: Refrigerate in an airtight container for up to four days. Freeze for up to three months
