There’s nothing worse than cooking up a delicious meal only to be left with piles of dishes… I’m all about keeping it simple!!
In this One Pan Chicken recipe, you get a little bit of sweetness from the cherries. But, it’s perfectly balanced with the shallot, garlic, and burst of lemon.
It’s hardy and nourishing enough to keep you full and satisfied, and still maintains those fresh flavors of summer that we crave in this heat.
Plus, it’s perfectly balanced with antioxidant rich carbohydrates, quality protein, and healthy omega-3 fats.
No blood sugar spikes or post-dinner cravings here!
Pro-tip: To add even MORE nutritional value and gut healing properties to this recipe, I highly suggest subbing in bone broth (or liquid gold for the gut as I call it) rather than standard chicken broth. Bone broth is rich in collagen, gelatin, amino acids, and other powerhouse nutrients for the gut!

Ingredients

2 tbsps Extra Virgin Olive Oil (divided)
1 1/8 lbs Chicken Breast (boneless, skinless)
2 cups Cherries (pitted, halved)
1/3 cup Shallot (chopped)
2 Garlic (clove, large, minced)
1 cup Chicken Broth
1 tbsp Lemon Juice
2 tbsps Fresh Oregano (chopped)
Sea Salt & Black Pepper (to taste)
Instructions
In a large skillet, heat half of the oil over medium-high heat. Add the chicken to the skillet and cook for four to six minutes per side until golden brown. The chicken won’t be cooked through. Set it aside.
In the same skillet, sauté the cherries and the shallot for two to three minutes until tender and juicy. Transfer to a plate.
Add the remaining oil to the skillet and sauté the garlic for 30 seconds, until fragrant. Add the broth and the lemon juice to the skillet. Bring to a simmer and then reduce the heat to medium-low. Let the sauce simmer for three to five minutes until slightly reduced.
Return the chicken and cherries to the skillet, and simmer for an additional five to seven minutes, until the chicken is cooked through. Season with salt and pepper.
Garnish with oregano and enjoy!
Another thing I love about this recipe this time of year is that it utilizes in-season produce! We’re nearing the end of cherry season, which means it’s time to put those delicious seasonal fruits to good use while we still have them!
I always recommend trying to get as much seasonal produce in your diet as possible. Seasonal produce means there is less time between the soil and your plate. This increases the variety of nutrients your body gets!
I also highly recommend checking out your local farmer’s market or heading to your local farm to purchase some delicious fresh cherries, especially while the summer season is still in swing!
