Healthy Potato Leek Soup Recipe for Gut Healing

This potato soup is better than the rest… This recipe is gut-healthy, tasty, and so much better than any soup you buy pre-made at the store!

We’re definitely still in soup season and I am loving it! 

I’m so excited I’m sharing one of my favorite soup recipes with you that’s perfect for this time of year.

As we continue to feel that chill in the air, I always find myself craving something warm and comforting. 

Soups are one of my favorite things to make because I love to pack them with as many nutrients as possible, the cooking process is so simple, it’s easy to digest, and the flavors hit the spot every time. 

I just made this Pressure Cooker Potato Leek Soup this week and it’s so delicious!

The potatoes and leeks make it creamy and comforting without any dairy, the herbs and lemon give it a kick of freshness, and the kale and celery give it that extra punch of nutrients.

This recipe is not only delicious, but also so healing for the gut and packed with nourishing ingredients. 

  • Potatoes and leeks are great sources of prebiotic resistant starch, which feeds your good gut bacteria. 

(FACT: Potatoes get a bad rap because they are a nightshade. While there might be a time and place to limit these, they can be a huge benefit to your gut overall. The key is to not pair them with inflammatory seed oils.)

  • Celery contains phytonutrients, which reduce inflammation in the digestive tract.
  • Kale is one of the most nutrient dense veggies out there packed with vitamins A, K, C, B6, manganese, calcium, potassium, and magnesium. 
  • Garlic stimulates the liver and colon and is fantastic at helping your body detoxify.

Healthy Potato Leek Soup Recipe

Description

This isn’t your average potato soup… This recipe is not only delicious, but also so healing for the gut and packed with nourishing ingredients.


Ingredients

Scale
  • 3 cups Vegetable Broth
  • 1 Leek (white parts only, chopped fine)
  • 2 stalks Celery (chopped)
  • 4 Garlic (cloves, minced)
  • 1 tsp Oregano (dried)
  • 1/8 tsp Dried Thyme
  • 1/2 tsp Sea Salt
  • 3 Yellow Potatoes (medium, chopped)
  • 2 cups Kale Leaves (stem removed, chopped)
  • 1 1/2 tbsps Lemon Juice
  • 1/4 cup Fresh Dill (optional, chopped)

Instructions

  1. Turn your pressure cooker to sauté mode and add a splash of vegetable broth. Then add the leeks and celery and cook for 4 to 5 minutes, until softened. Add the garlic, oregano, thyme and sea salt and stir to combine, cooking for one minute more.
  2. Turn off the sauté mode and add the potatoes along with the remaining vegetable broth. Stir to combine. Put the lid on and set to “sealing” then press manual/pressure cooker and cook for 10 minutes on high pressure. Once finished cooking, turn off and do a quick release.
  3. Remove about 3/4 of the soup and place in a blender. Carefully blend to purée until smooth. Pour this back into the pressure cooker. Add the kale leaves and lemon juice and stir. Heat through to let the kale wilt a little. Divide into bowls, garnish with dill if using, and enjoy!
