Eating for gut health and autoimmunity doesn’t mean you have to lock up your snack cabinet forever or live in fear of enjoying yummy treats.

Today I’m sharing the recipe for a fun spin on a childhood classic— RICE KRISPIE TREATS!
My secret ingredient in these to make them gooey is to replace marshmallows with sunbutter (which is much easier on the gut than peanut butter) and helps the puffed rice stick together.
These snacks are made with gut healthy ingredients rather than nutrient void marshmallow and added sugars. This is a little snack or dessert you can actually feel good about.
Here’s a quick breakdown of the ingredients in my SunButter Rice Puff Treats:
🌻 SunButter—>
This sunflower butter has only one ingredient— organic roasted sunflower seeds. No added salts or sugars! Sunflower seeds are high in vitamin E and help with glutathione production, which is an antioxidant and powerhouse for the gut.
We opt for sunflower seed butter rather than peanut butter because peanuts are typically inflammatory for the gut. They are high in molds and mycotoxins. SunButter is the best replacement that has a similar consistency.
🍯 Local Honey—>
Consuming local honey can support your immune system! It helps your immune system recognize local allergens, which results in you better tolerating the pollen in your area and less allergy symptoms. It is also a great natural sweetener I suggest using when you need to sweeten up a dessert.
🥥 Coconut Oil—>
Coconut oil is a wonderful source of good healthy fats! It can help reduce inflammation along your intestinal tract and significantly increase the good bacteria in your gut!
🍚 Soaked & Sprouted Rice Puffs—>
These rice puffs are the best because they’re sprouted and soaked beforehand! This process helps break down phytic acid and anti-nutrients, which improves their digestibility unlike other puffed rice cereals. In addition, some rice cereal is loaded with folic acid–the synthetic form of folate that most individuals with certain genetic and autoimmune conditions should try to avoid

Ingredients
Scale
1 1/2 tsps Organic Sunbutter
1/2 cup Local Honey
2 tbsps Coconut Oil
2 tsps Vanilla Extract
2 1/2 cups Sprouted Brown Rice Crisp Cereal
Instructions
Line a baking dish with parchment paper and set aside.
Set up a double boiler: Fill a medium pot with an inch of water and place a smaller pot or heat-safe bowl on top ensuring the water is not touching the bottom of the smaller pot or bowl. The smaller pot or bowl should rest tightly on top of the pot and any water or steam should not be able to escape. Bring water to a boil then reduce to the lowest heat.
Add the sunflower seed butter, honey, coconut oil, and vanilla to the smaller pot and stir until well combined and smooth. Remove the pot from the heat. Stir in the rice puffs cereal.
Transfer to the prepared baking dish and press into an even layer.
Refrigerate for at least an hour or until firm. Remove from the baking dish and cut into squares. Store in the fridge until ready to enjoy.
These SunButter Rice Puff Treats are a snack your whole family will love! I love eating them as a dessert or bedtime snack. Plus, they’re a great healthy alternative for the kids as well!
