Superbowl Sunday Chicken Tenders
We may not know the two teams making it to the Superbowl yet and who we are rooting for, but we can at least have our menu for the big game picked out!
Whether you’re hosting a crowd or just kicking back to watch the commercials (I mean, the game 😉), having healthy options is key!
That’s why I’m sharing my Buffalo Chicken Tenders recipe with you.
These crispy, flavor-packed chicken tenders are coated in a good-for-you crust for that extra crunch. The sauce? Pure gold—delicious AND nutritious. Whether or not your team takes the trophy, you’ll surely have a winning dish!

These crispy, flavor-packed chicken tenders are coated in a good-for-you crust for that extra crunch.
Ingredients
Scale
10 ozs Chicken Breast (boneless, skinless, sliced into strips)
3/4 cup Cashews
2 tsps Chili Powder
1 tsp Paprika
1/2 tsp Cayenne Pepper (optional)
1/4 tsp Sea Salt
1 Egg
1 tbsp Hot Sauce (optional)
Instructions
Preheat the oven to 350ºF (177ºC).
Add the cashews along with the chili powder, paprika, cayenne, and sea salt to a food processor or blender and pulse until a fine flour is formed (about 30 seconds). Transfer onto a plate.
Whisk the egg with the hot sauce in a small bowl.
Take each chicken strip and dip it in the egg with hot sauce, then in the cashew flour mix, coating all sides very well. Place onto a pan lined with parchment paper. Repeat with all the chicken strips and bake for 22 to 24 minutes, or until chicken is cooked through.
Remove from the oven and divide onto plates. Serve with your favorite dipping sauce and enjoy!
Valentine’s Day Coconut Raspberry Cups

Ingredients

1/2 cup Coconut Cream (chilled in the fridge overnight)
1 1/2 tsps Maple Syrup
1/2 tsp Vanilla Extract
1/2 cup Raspberries
Instructions
Add the chilled coconut cream, maple syrup, and vanilla to a bowl. Using a hand mixer, whip on medium speed for two to three minutes or until light and fluffy.
Use a fork and smash the raspberries in a bowl.
Layer the coconut cream and smashed raspberries into small bowls, jars, or a glass. Use a spoon and gently swirl the layers. Enjoy!
