First of all, I’d like to take a moment to honor those who have fought for our freedom. It’s important to remember that Memorial Day is much more than just a day off work, but a day to recognize those who sacrificed their lives for this country. I thank those who have fallen and my thoughts are with their loved ones.
For many of us, including myself, Memorial Day weekend brings back so many childhood memories. Whether it’s barbecuing in the backyard, splashing around in the pool, or hanging at the beach— Memorial Day always marks the first unofficial weekend of the summer.
One thing I always loved were the patriotic popsicles we enjoyed to kick off the season. Remember those classic red, white, and blue firecracker popsicles? So fun and festive!
As I prep for this weekend, it got me thinking— why opt for artificial colors and corn syrup when we have sweet and colorful fruit right at our fingertips?! It seems so counterintuitive!
And so, I present to you a healthified version of patriotic popsicles!
This healthy memorial day popsicle recipe includes juicy in-season cherries and blueberries to pack in the nutrients and to add that vibrant patriotic color without artificial ingredients and corn syrup!
Ingredients
Scale
1/2 cup Frozen Cherries (roughly chopped)
1/2 cup Blueberries
1/2 cup Canned Coconut Milk
Instructions
1. If you do not have popsicle moulds, purchase 3oz cups and popsicle sticks from the dollar store. Insert each popsicle stick into the middle of a cherry to anchor it in each cup.
2. Add chopped cherries and blueberries to fill about 3/4 of the cup, around the stick. Fill remainder of cup with coconut milk.
3. Place in freezer for 4 hours or until completely frozen.
4. Once frozen, run under warm water for a few seconds to make it easier to remove from the cup or mould. Enjoy!
These are so simple, delicious, nutritious, AND are reminiscent of the fun Memorial Day treats I had growing up.
In this recipe, I use in-season cherries and blueberries to pack in the nutrients and to add that vibrant color! These delicious fruits contain tons of antioxidants and have impressive amounts of vitamins and minerals.
I also include coconut milk, which is a wonderful healthy fat. It contains medium-chain triglycerides, which are so healing for the gut. My favorite brand is Native Forest!
Remember— festive treats don’t have to be inflammatory or set you back on your health journey. There are so many ways to make delicious goodies with fresh nourishing ingredients that ADD to your health!
