But this is actually counterproductive because you NEED healthy fat in order to burn fat… 

It helps regulate your internal thermostat, balances your blood sugar and metabolism, promotes healthy cell growth, AND reduces inflammation. Fat is so essential for your body to function properly, especially when working on healing the gut and reversing autoimmunity!

They’re fresh, satisfying, and have the perfect amount of zing! They pack all the fresh flavors I crave, but also contain all the nourishing properties that an actual mojito lacks. 

They’ve got good saturated fats like coconut oil and coconut butter. Not those pesky trans fats typically found in processed foods. 

Coconut oil contains a fatty acid called lauric acid. When you digest lauric acid, your body produces a byproduct called monolaurin, which has shown to be antimicrobial as it keeps bad bacteria at bay. Unrefined coconut oil can also reduce inflammation along the intestinal tract and significantly increase the GOOD bacteria in your gut!

And not to mention, they also include ginger and raw honey in the ingredients… powerhouses for the gut! 

Ginger increases prostaglandins, which are hormone-like substances that fight against inflammation. Plus it activates digestive enzymes in the gut, which promotes healthy digestion! Raw local honey strengthens the immune system and also contains important enzymes, minerals, and vitamins.

Coconut Ginger Mojito Fat Bombs


Description

These Ginger Mojito Fat Bombs are fresh, satisfying, and have the perfect amount of zing!


Ingredients

Scale

1/4 cup coconut oil

1/4 cup raw honey

1 cup coconut butter

1 tsp vanilla extract

1/2 lime (juiced, zested)

1/4 cup mint leaves (chopped)

1 1/3 tbsps ginger (peeled, grated)


Instructions

1. In a saucepan over low heat, melt the coconut oil, honey, and coconut butter. Add the vanilla extract and whisk until well combined.

2. Pour the mixture into a silicone muffin tray or muffin cups. Top each cup with lime juice, zest, mint, and ginger.

3. Refrigerate for about one hour or until set. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to four to five days, or freeze for up to three months.

Serving Size: One serving equals one fat bomb, approximately 2-inches in diameter and 1-inch deep.

The thought of eating a “fat bomb” may sound scary to you because so many of us have been programmed to think of fat as evil. But these nourishing bombs of fresh flavor could very well be exactly what your gut is craving. 

To give these Coconut Ginger Mojito Fat Bombs a little satisfying crunch, I also like to add coconut flakes as a topping. It makes these into the perfect snack… Fresh lime and mint, nourishing coconut and honey, and a little crunch to top it off.
