As a busy working mom, I simply don’t have time for a midday slump! 

This doesn’t mean I’m immune to exhaustion… I’m not superwoman! But this DOES mean I prioritize getting ahead of that midday energy dip and fueling my body with what it needs to stay energized. 

Clients, friends, and family always ask me, “How do I keep my energy up when I feel like I’m constantly going?!” 

I hear it all the time… that between chasing around kids or grandkids, staying on top of work, and managing a household, it’s a struggle to stay awake once it hits 2 PM. And trust me, I’ve been there! 

That’s why I always prioritize two things each day that keep me on top of my game. 

My midday energy non-negotiables are: STAY HYDRATED + PRIORITIZE PROTEIN. 

The first one is easy enough. Keep a water bottle you love on hand and sip, sip, sip throughout the day. 

The second one, however, takes a little more planning and thinking ahead…

The key is to have protein-rich snacks prepped and ready for moments where you need an energy boost but are pressed for time.

Every Sunday, I batch a few protein treats because I’m a busy working mom juggling client calls and homeschooling two little boys. If I don’t plan ahead, I’ll reach for something that tanks my blood sugar and my focus.

I know I need energy during the week to keep up with everything so I can be present for my family and clients! 

The key to this being effective is choosing balanced, protein-rich snacks to grab that you ACTUALLY ENJOY EATING. 

A protein snack I have been loving lately is these pumpkin protein bars 🎃.

Instead of feeling tempted by fake pumpkin-spiced store-bought treats, I find making this protein-rich seasonal snack is a great way to indulge when a craving strikes AND keep my energy stable. 

These pumpkin protein bars are creamy, perfectly spiced, and made with real pumpkin. BONUS: They are kid and husband approved too 😉 

Unlike most pumpkin sweets, they are filled with nourishing fats, protein, and real ingredients that support stable blood sugar and steady energy.

No-Bake Pumpkin Protein Bars


Description

Tired midday? Grab one of these no-bake pumpkin protein bars to get ahead of the midday crash. They have wholesome protein + real pumpkin!


Ingredients

Scale
  • 1/2 cup Coconut Flour
  • 1/4 cup Vanilla Protein Powder
  • 3/4 tsp Pumpkin Pie Spice
  • 1/2 cup Almond Butter
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/2 cup Pureed Pumpkin
  • 1 tbsp Unsweetened Almond Milk
  • 1/2 cup Dark Chocolate Chips
  • 1 tbsp Coconut Butter (melted)

Instructions

  1. Line a pan with parchment paper. (Tip: Use an 8×8 inch pan if making 8 servings.)
  2. Add the coconut flour, protein powder and pumpkin pie spice into a large mixing bowl and whisk to combine.
  3. Using a small pot over low heat, add the almond butter and maple syrup and whisk until combined and sticky, then add the vanilla extract.
  4. Add the wet ingredients to the dry ingredients along with the pureed pumpkin. Stir until it is all combined, then add the milk and chocolate chips. Stir again until well combined. The dough will feel very thick.
  5. Transfer the dough into your pan and flatten with your hands, applying firm pressure to ensure it is packed. Refrigerate for at least 30 minutes.
  6. Remove the dough from the fridge and slice into even bars. Drizzle the bars with melted coconut butter. Store in the fridge until you are ready to eat. Enjoy!

When your blood sugar is balanced, your energy stays consistent, your cravings stay in check, and your motivation stays high.
