Memorial Day weekend will be upon us before we know it!
For many of us, including myself, Memorial Day weekend brings back so many childhood memories. Whether it’s barbecuing in the backyard, splashing around in the pool, or hanging at the beach— Memorial Day always marks the first unofficial weekend of the summer.
One thing I always loved was the patriotic treats we enjoyed to kick off the season!
This year, I thought what better way to bring on the summer while honoring our country (& our health) than a delicious Red, White & Blue Smoothie Bowl?!
As I prep for this weekend, it got me thinking— why opt for artificial colors and corn syrup to bring out the red, white, and blue when we have sweet and colorful fruit right at our fingertips?! It seems so counterintuitive!
In this recipe, I use in-season strawberries & blueberries plus a boost of beetroot powder to pack in the nutrients and to add that vibrant color! These contain tons of antioxidants and have impressive vitamins and minerals.
I also include coconut flakes for those white stripes, which is a nutrient dense healthy fat. Coconut is autoimmune-approved and contains medium-chain triglycerides, which can support the gut!
This Red, White & Blue Smoothie Bowl also calls for protein (obviously 😉). One of my go-to autoimmune-approved and gut-healthy picks for protein is Equip Prime Protein.

Ingredients
Scale
1 cup Unsweetened Coconut Milk (cold)
1 tsp Beetroot Powder
1 serving Protein Powder
1/2 Frozen Banana
1 tbsp Unsweetened Shredded Coconut
1/2 cup Frozen Strawberries
1/2 cup Frozen Blueberries
1 cup Frozen Zucchini
3 Ice Cubes
Instructions
Throw all ingredients into a blender and blend until smooth.
Pour into a bowl.
Top with straight rows of sliced banana, strawberries, blueberries, shredded coconut, and gogi berries
Remember— festive treats don’t have to be inflammatory or set you back on your health journey. There are so many ways to make delicious goodies with fresh, nourishing ingredients that ADD to your health!
