What you choose to eat in the morning for breakfast determines your energy for the ENTIRE DAY!
That’s why we want to make sure whatever we choose it’s balanced with the right amount of macronutrients to stabilize blood sugar. Doing this keeps our energy up and metabolism strong.
And since we want to support gut health and autoimmunity to feel our best, we also want to ensure our breakfast has the fiber, vitamins, and minerals that support cellular healing.
But mornings can be chaotic, and a balanced breakfast might not be a top priority. I get it!
So what’s my solution? I’ve got the perfect breakfast formula + recipe— simple, easy to make, portable, and nutrient dense.
One of my go-to breakfasts to prep is chia pudding! 👇🏻
You can prepare it in under five minutes the night before, let the chia seeds work their magic overnight, and voilá you’ve got a delicious breakfast pudding that can last you up to 4 days!
The flavor options are endless for chia pudding but one fresh summer combo I am loving at the moment is this Papaya Coconut Chia Pudding.
What’s unique about this chia pudding recipe is that papaya is particularly effective in supporting digestion.
Papaya contains a natural enzyme called papain, which can help you better digest food and absorb nutrients.
Papain helps your body break down proteins into peptides and amino acids.
What this means for you is less bloating and gas + better and more consistent digestion. Not to mention, chia seeds also pack a punch with incredible health benefits:
Fiber in chia seeds feeds the good bacteria in your gut, keeping your microbiome balanced and healthy.
Chia seeds are a complete protein
They contain all nine essential amino acids that the body can’t make.

This Papaya Chia Pudding is the perfect breakfast for busy mornings and all-day energy.
Ingredients
Scale
1/4 cup Chia Seeds
1 cup Plain Coconut Milk (from the carton)
1 tsp Vanilla Extract
1 1/2 cups Papaya (chopped)
Instructions
Add the chia seeds, coconut milk, and vanilla extract to a bowl. Whisk well to thoroughly combine.
Refrigerate for at least one hour or until the chia seeds have set.
Once the pudding is ready, mash the papaya in a bowl. Then, layer the mashed papaya and pudding into jars. Enjoy!
Just 5 minutes of prepwork the night before can save you time and sanity during those busy mornings. And you’ll be setting yourself up for better energy and digestion.
